Recipe of Bhartha

Smokey roasted eggplant mash with Indian spices, this Punjabi Baingan Bharta is a very popular dish in North India.


Brinjals Roasted 500 gm
Ghee 100  gm
Onion chopped 200 gm
Cumin seeds 1 tsp
Ginger fine chopped 1 tbsp
Green chillies 1 tsp
Deghi mirch 1 tsp
Turmeric ½ tsp
Salt ½ tsp
Red chilli powder 1 tsp
Tomatoes chopped 200 gm
Lemon juice 1 tbsp
Garam masala 1 tsp


  1. Heat ghee in a pan add cumin seeds and onion sauté for till light brown.
  2. Then add ginger cook for 1 min and add deghi mirch, salt red chilli powder, green chillies and add some water cook for few seconds.
  3. Now add tomatoes and cook till oil separates.
  4. Minced the roasted brinjals and mix well and cook for 4-5 min.
  5. Sprinkle garam masala and lemon juice.
  6. Garnish with green coriander.
