Recipe of Bhartha
Smokey roasted eggplant mash with Indian spices, this Punjabi Baingan Bharta is a very popular dish in North India.
Ingredients:
Brinjals Roasted | 500 gm |
Ghee | 100 gm |
Onion chopped | 200 gm |
Cumin seeds | 1 tsp |
Ginger fine chopped | 1 tbsp |
Green chillies | 1 tsp |
Deghi mirch | 1 tsp |
Turmeric | ½ tsp |
Salt | ½ tsp |
Red chilli powder | 1 tsp |
Tomatoes chopped | 200 gm |
Lemon juice | 1 tbsp |
Garam masala | 1 tsp |
Method:
- Heat ghee in a pan add cumin seeds and onion sauté for till light brown.
- Then add ginger cook for 1 min and add deghi mirch, salt red chilli powder, green chillies and add some water cook for few seconds.
- Now add tomatoes and cook till oil separates.
- Minced the roasted brinjals and mix well and cook for 4-5 min.
- Sprinkle garam masala and lemon juice.
- Garnish with green coriander.
