    • Mangoes: Take 2 mangoes of the preferred Kesar or Alphonso variety. Choose the mangoes that are ripe and fibrous. You can also use canned mangoes.
    • Sugar: You can choose to add either white sugar, unrefined sugar or even brown sugar. But if you want natural sweeteners to it, you can add jaggery or cane sugar. Make sure to add additional sweeteners only if aamras tastes bland or tangy.
    • Saffron: Add a few strands. It is totally optional.
    • Cardamom powder: Add a pinch of it. You can also take one cardamom clove and crush it before using it.
    • Chopped nuts: Add for extra richness of crunchiness. It is recommended for garnishing.
    • Dry ginger: It is also known as sonth in Hindi. However, you can totally skip the ingredient if you do not enjoy its flavour.
    • Milk or water: Add to adjust consistency.

  • Take 2 mangoes and rinse them thoroughly in clean water, followed by peeling them off with a knife.
  • Chop the mango slices into pieces and put them in a blender jar. Give the blender a good three or four mixes.
  • Open the lid and add water or milk to adjust its consistency so that it forms a smooth puree.
  • Have a spoonful of the mixture to taste. You can add jaggery or sugar to the mixture if it feels extremely tangy, sour, or bland.
  • Now add the flavourings, such as cardamom, saffron, or dry ginger to the mixture as per your liking and preference.
  • Transfer the mixture to a bowl and place it into the refrigerator to chill for an hour or so before serving.
  • Serve and enjoy the chilled aamras with puri or roti.

  • Choose mangoes that are pulpy and not fibrous.
  • Do not add milk or water to the mixture. Make sure it does not attain a flowy consistency.
  • Avoid adding sweeteners if the mixture feels sweet enough.
  • You can top aamras with a teaspoon of ghee.
  • You can garnish the mixture with nuts like cashews, almonds, or pistachios to the mixture for extra punch.
  • Add ice cubes to enjoy extra chillness.
