What is the National Culinary Challenge 2026?

The National Culinary Challenge 2026 is a national-level culinary competition conducted across 21 campuses of NFCI. This challenge brings together young culinary talents from different centers and evaluates them on practical cooking skills, presentation, creativity, hygiene, and confidence.
This national culinary challenge is organized in three rounds:
- Round 1: Centre Level
- Round 2: Centre Level (Advanced)
- Grand Finale: National Level

Round 1 Selection Criteria – Centre Level
This is the first stage where students showcase their culinary understanding and dish presentation skills.

Theme for Round 1: “Flavors Redefined”
- Any Indian regional cuisine
- Only vegetarian dishes are allowed
- One main dish with proper accompaniments
- Based on family or traditional recipes
How Are Students Evaluated in Round 1?
Students are evaluated on 100 marks. Go through the below table, which is divided into four key parameters:

What Judges Look for in Round 1?
- Professional appearance and chef uniform
- Clear explanation of:
- Dish origin
- Ingredients
- Nutritional value
- Why the dish was chosen
- Balanced taste and authentic flavours
- Neat plating and attractive presentation
- Proper recipe card display
Selection Rule:
- Students with the highest total scores are selected for Round 2.
- Round 1 winners receive Bronze Medals.
The NCC Round 1 was conducted in December and witnessed participation of 1,292 students. From this, 240 students were shortlisted and qualified for Round 2.
Round 2 Selection Criteria – Centre Level (Advanced Round)
Round 2 is more challenging and focuses on sustainability, hygiene, creativity, and advanced presentation.
Theme for Round 2: “Sustainable Indian Vegetarian Dish – 3C Challenge”
- Crunch
- Colour
- Creativity
- Indian regional cuisine
- Rice must be the main ingredient
- One main course with accompaniments
How Are Students Evaluated in Round 2?

Round 2 also carries 100 marks, but it focuses more on hygiene and taste:

What Judges Look for in Round 2?
- Strict kitchen hygiene and sanitation

Selection Rule:
- Top-scoring students from each center are selected for the Grand Finale.
- Round 2 winners received Silver Medals.
The NCC Round 2 was conducted in December, in which 240 students who qualified from Round 1 participated. Out of these, 69 students were shortlisted.
Grand Finale: National Level
NCC Round 3 will be conducted on 30th January 2025 among the 69 shortlisted students.
What Happens in this Culinary Challenge?
- Students compete using ingredients and infrastructure provided.
- Judged by renowned national-level chefs – Chef Nishant Choubey, Chef Ajay Chopra, and Chef Vinod Badoni.
- Performance is evaluated on professional standards, creativity, taste, and execution
