  1. Heat oil and sauté the onions until golden. Add ginger-garlic paste and cook for a minute. Add tomatoes, turmeric, red chilli powder, coriander powder, and salt. Cook until the tomatoes become soft.
  2. Add chicken and mix well. Cook for 5–7 minutes. Add water, cover, and cook until the chicken is tender. Add garam masala and coriander before serving.

 

2. DAL TADKA

Ingredients

  • Yellow moong or toor dal – 1 cup
  • Water – 3 cups
  • Turmeric – ½ tsp
  • Salt – As needed

  • Green chilli – 1
  • Dried red chilli – 1
  • Asafoetida – a small pinch

  2. Cook for 30–60 seconds and pour the hot tadka over the cooked dal. Mix gently and garnish with coriander. Serve with rice or roti.

3. Chana Masala

Chana Masala is a flavourful chickpea curry that is simple, filling, and suitable for beginners.

Ingredients

  • Boiled chickpeas – 2 cups
  • Onion – 1 large
  • Tomato – 2 medium
  • Ginger-garlic paste – 1 tbsp
  • Oil – 2 tbsp
  • Cumin seeds – 1 tsp
  • Turmeric – ½ tsp
  • Coriander powder – 1 tsp
  • Red chilli powder – ½–1 tsp
  • Garam masala – ½ tsp

Chana Masala

Method

  1. Heat oil and add cumin seeds. Add onions and cook until light golden. Add ginger-garlic paste, followed by tomatoes, turmeric, coriander powder, chilli powder, and salt.
  2. Cook until the tomatoes become soft. Add boiled chickpeas and water. Cover and simmer for 8–10 minutes. Add garam masala and coriander before serving.

4. Aloo Matar

Aloo Matar is a simple potato and green pea curry that can be prepared with everyday ingredients. It is one of the easiest Indian curry recipes for a beginner to practise.

Ingredients

  • Potatoes – 3 medium
  • Green peas – 1 cup
  • Onion – 1 medium
  • Tomato – 1 medium
  • Ginger-garlic paste – 1 tsp
  • Oil – 2 tbsp
  • Cumin seeds – 1 tsp
  • Turmeric – ½ tsp
  • Coriander powder – 1 tsp

Method

  3. Cover and cook until the potatoes are tender. Add garam masala and fresh coriander before serving.

5. Paneer Butter Masala

Paneer Butter Masala is a popular creamy curry that is often served in Indian restaurants. It is a good dish for beginners who want to learn how to make a smooth, rich gravy.

Ingredients

  • Paneer – 250 g
  • Tomato – 3 medium
  • Onion – 1 small
  • Cashews – 8–10
  • Butter – 2 tbsp

  • Cream – 2 tbsp
